This creamy chickpea curry is a warm, flavorful vegan dinner that takes less than 30 minutes. It’s packed with fiber and plant protein, and goes perfectly with rice or naan.

Ingredients:

  • 1 tbsp coconut oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp curry powder
  • 1 can chickpeas, drained
  • 1 cup canned coconut milk
  • 1/2 cup crushed tomatoes
  • Salt to taste
